Method

  1. 1Cut bitter gourd, drumstick, raw banana and brinjal into even fingers.
  2. 2Lightly fry the bitter gourd in ghee until edges brown, then set aside.
  3. 3Blend poppy seeds and mustard seeds with a little water into a smooth paste.
  4. 4Temper panch phoron and bay leaf in ghee until fragrant.
  5. 5Add the remaining vegetables, turmeric and salt; saute briefly.
  6. 6Pour in water, cover and simmer until the vegetables are just tender.
  7. 7Stir in the poppy-mustard paste and milk, then return the bitter gourd.
  8. 8Simmer gently until the gravy thickens, finishing with a spoon of ghee.
  9. 9Serve warm with steamed rice.
