Method

  1. 1Soak the soya chunks in hot water for ten minutes, then squeeze out the water.
  2. 2Coat the chunks in a batter of cornflour, plain flour, soy sauce and salt.
  3. 3Deep-fry or shallow-fry until golden and crisp, then drain.
  4. 4In a wok, heat the oil and stir-fry the garlic, ginger and green chilli.
  5. 5Add the finely chopped onion and capsicum, stir-frying for two minutes.
  6. 6Stir in the soy sauce, chilli sauce, tomato ketchup and vinegar.
  7. 7Pour in the water and bring to a simmer.
  8. 8Add the cornflour slurry and stir until the gravy thickens and turns glossy.
  9. 9Fold in the fried soya chunks and toss to coat.
  10. 10Garnish with spring onion greens and serve hot.
