Method

  1. 1Rinse 150 g sprouted moong beans under cold water and drain well.
  2. 2In a small bowl, mix 2 tbsp tamarind pulp with 30 ml warm water and strain to make tamarind chutney.
  3. 3In another bowl, combine 30 g fresh mint leaves, 30 g fresh cilantro, 1 small green chili, and 10 g lemon juice. Blend into a coarse paste.
  4. 4Heat 15 ml oil in a small pan over medium heat. Add 5 g cumin seeds and let them sizzle for 10 seconds.
  5. 5Pour the tempered oil over the sprouts in a large mixing bowl.
  6. 6Add the tamarind chutney and mint-cilantro chutney to the sprouts. Toss gently to coat.
  7. 7Sprinkle 15 g sev and 5 g roasted peanuts over the top.
  8. 8Toss once more, then transfer to serving plates. Garnish with a few mint leaves.
  9. 9Serve immediately while the sev is crisp.
