Method

  1. 1Clean and finely chop the banana stem, removing the fibrous threads.
  2. 2Boil the chopped stem with turmeric and salt until soft, then drain and lightly mash.
  3. 3Heat mustard oil; add the bay leaf and cumin seeds and let them crackle.
  4. 4Add green chilli and cumin powder, then the banana stem.
  5. 5Cook 6-8 minutes, stirring, until dry.
  6. 6Stir in grated coconut and sugar, cook 2 minutes and serve with rice.
