Method

  1. 1Press the tofu well, then cut it into bite-sized cubes.
  2. 2Coat the cubes in a batter of cornflour, plain flour, soy sauce and salt.
  3. 3Shallow-fry until golden and crisp on all sides, then drain.
  4. 4In a wok, heat the oil and stir-fry the garlic, ginger and green chilli.
  5. 5Add the finely chopped onion and capsicum, cooking for two minutes.
  6. 6Stir in the soy sauce, chilli sauce, tomato ketchup and vinegar.
  7. 7Pour in the water and bring to a simmer.
  8. 8Add the cornflour slurry and cook until the gravy thickens and turns glossy.
  9. 9Gently fold in the fried tofu to coat.
  10. 10Garnish with spring onion greens and serve hot.
