Method

  1. 1Heat 2 tbsp oil in a large wok or deep pan over medium heat.
  2. 2Add 1 tsp mustard seeds and let them sizzle for 10 seconds.
  3. 3Add 1 finely chopped onion, 1 chopped green chilli, and 1 tsp grated ginger. Sauté for 2 minutes until onions turn translucent.
  4. 4Add 1 cup mixed vegetables (carrots, beans, bell peppers, cabbage) and stir-fry for 3 minutes until slightly tender.
  5. 5Add 200 g cooked noodles (pre-boiled and drained) and toss well to combine with the vegetables.
  6. 6In a small bowl, mix 2 tbsp soy sauce, 1 tbsp vinegar, 1 tsp sesame oil, 1 tsp chilli sauce, and 1/2 tsp black pepper. Pour over the noodles and stir-fry for 2 minutes.
  7. 7Add 1/2 tsp salt to taste and 1 tbsp water if the noodles seem dry. Toss well to coat evenly.
  8. 8Garnish with 1 tbsp chopped spring onions and serve hot.
